Hot weather driving you loopy? Parsely missing from your life? Never known where bulghar is in yr supermarket? Maybe it's time to try this quick n'easy healthy summer salad.

Tabouli
What you need
  • 2 bunches of parsely, chopped
  • 1 bunch of mint, chopped
  • 100g bulghar (cracked wheat)
  • 2 small tomotoes, diced
  • 4 shallots, chopped
  • some vinigarette* (a type of salad dressing)



Soak the bulghar in hot water for half an hour, or until it absorbs all the water. If it's really soggy put it in a tea towel and squeeze out the excess water. Mix all the ingredients together and voila!


Vinagarette (bonus recipe!)

  • 1 tb vegetable oil
  • 2 tbs of olive oil, otherwise just use vege oil
  • 2 tbs of white vinegar
  • 1 tb of wine vinegar, otherwise just use white vinegar
  • 2 tb of lemon juice
  • pinch of sugar
  • clove of garlic, finely chopped
  • salt, pepper

Mix all these together well (put them in a jar and shake) and dribble over yr salad. Muck around with quantities and ingredients eg. you can use orange juice instead of lemon, cut down on oil or vinegar, throw in some fresh herbs for that gourmet touch....
